I’m a little bit obsessed with bliss balls at the moment… so when I stumbled across this recipe amongst the cute kitten videos on facebook (pretty much the only reason I’m on there these days), I took a screen shot and proceeded to the kitchen… I can’t remember what page I saw it on now but credit where credit’s due! These are YUM!
CARROT CAKE Bliss Balls
1 cup grated carrot
1 cup almond meal
6 large medijool dates
1/4 cup unsweetened desiccated coconut (plus a little for coating)
1 tsp cinnamon
1 tsp ground ginger
1 heaped tbsp raw honey
1 heaped tbsp peanut butter
1 tbsp water
The recipe said to blend all ingredients in a food processor but since I don’t have one I just chopped the dates into the mix and then mashed the hell out of it with a trusty fork.
HOT TIP: I also added a little bit of protein powder!
Once combined, roll into balls and then stick those babies in the fridge for a couple of hours.
These are really yum and you can tweak to your taste by adding a bit more of the cheeky ingredients if you have a killer sweet tooth, and FYI depending on how juicy your carrots are you may not need to add the water!
